Wines made with Syrah grapes are highly acidic, vigorous and full-bodied, with abundant tannins and colouring matters. Their aromas range from floral to fruity with slightly smoked hints. They are unctuous, vigorous, wellbalanced and smooth on the palate, with marked tannins, rounded off during caskageing. Blackcurrant, cassis, plum and blackberry jam, and spicy flavours predominate.

Part aged under the sea

Red wine aged for twelve months in American oak barrels.

Winery only release El Cismático when we believe we have the correct conditions to make an Old Vine Garnacha with the capacity to age gracefully for years in bottle, gaining complexity along the way.

The Macabeo comes from our Cerro Merino vineyard at 920 metres elevation planted in 1969 on a glacis soil. The Garnacha Blanca from a gravel soil at 750 metres.

We follow Burgundian methods in the cellar: grapes are loaded whole bunch to the press, then we use a long slow press cycle with no sulphur and enzymes. Must is cold settled over night then racked to used 500l Stockinger and François Frère barrels with almost zero toast. Spontaneous fermentation proceeds at ambient cellar temperature (18 to 20C) for around 2 weeks until dry. The wine was then kept on full fermentation lees for a further month before racking back to the same barrels.

The wines typically have more malic acid this year due to the cooler ripening period and the wines are crunchy and appealing.

This Wine is unfiltered. It has only been centrifuged in order to preserve its style and aromas.

Warm temperate climate with a Mediterranean rainfall pattern, characterized by significant temperature variations between day and night.
Annual precipitation averages 650 mm concentrated during the winter months.

Initiated by selected yeasts. Fermentation was carry out at controlled temperature 25-28 degree. Traditional pumping respecting the characteristics of fruit.

Intense golden color with green highlights. Fruity aroma with notes of pineapple and peach as well as hints of toasted bread. Good and balance acidity with soft and delicate bubbles in the glass. Elegant and silky.

Part aged in whisky barrels

This Albariño can stands out in terms of its purity and freshness and that also has the capacity to age gracefully in bottle for 5-10 years.

The soil into which our Bodegas vines sink their roots are watered by the Cidacos river and watched over by the Sierra de Yerga and Peña Isasa cliffs. In this setting the “cradle” in which the vines grow is carefully tended. The weather conditions, with Mediterranean climate influences, add their intense character to our wines.

Petit Verdot, Intense violet color, red fruits stand out, spicy notes with elegant graphite at the end.

Ruby intense color, expressive red fruit and smooth cacao touches. Pleasant and vivacious mouth entry.

Cherry color with red reflections. Aromas of red berries with a slight touch of vanilla. Full body in mouth, spicy, with a long finish.

The tirage is made on January (addition of sugar and yeasts to the base wine, immediately before bottling, in order to produce the second fermentation in the bottle).
The disgorging is done, after a minimum of 9 months of bottle aging in our underground
cava, adding organic natural sugar, obtaining a total of 10 g/l and resulting in a brut cava.

This is a sweet wine to be consumed with desserts, perfectly citric, fresh fruit and matured cheeses.

We ferment the wort at a stable temperature and once the fermentation is done
the wine is worked over lees for three months to extract its maximum expression.

Partially aged in American oak barrels and on its own lees for a minimum period of five months.

The key to this wine is the long time spent working with the fine lees to obtain length and complexity.

The wines are characterised by great energy and extremely forward fruit. A great antidote to the events of the year.

Fermentation: Initiated by selected yeasts. Fermentation takes place at controlled temperatures between 25 - 28ºC.
Extraction: Traditional pump-overs, respecting the inherent characteristics of the fruit.
Maceration: Cold pre-fermentation maceration for 5 days at 7°C. Complete Malolactic Fermentation.

Brilliant Pale Yellow with green reflections. With tropical fruit fragances with citric and mineral touches on nose. Pleasant acid sensation mouth entry.
